What is Dhokla?


Dhokla is very popular and authenticates delicious Gujrati Snacks Recipe made with gram flour or bean

This recipe is generally served as snacks but it is also perfect for breakfast also, as it is very healthy food and also digest very quickly. Khaman Dhokla is generally sour-sweet in taste. Even today I will tell you how to make this sour-sweet and a little spicy dhokla.

Being lives in Kolkata from childhood I seen many sweet shops sell dhokla. I still remember when I was a kid I used to go to the sweet shop with my dad and asked for Dhokla.
After all these years, I could not forget the sweet and sour taste of Dhokla of that sweet shop.


Fermentation will bring the many changes in the food in terms of taste, the flavor. I have made this khaman dhokla without fermenting the batter. 

Basically, it is an instant dhokla with the addition of fruit salt (eno). This eno fruit salt will make the Recipe of Khaman Dhokla fluffy spongy and porous in texture. 

But yes you can avoid this eno also if you don,t like. In the sweet shop, they used baking powder instead of eno, so You can use that also to get perfect dhokla.
I have been making this besan or gram-flour khaman dhokla recipe for many times. Though I use the only besan, but you can even use just besan with rice or a mixture of chana dal and urad dal also. 

Serve this authenticate Gujarati khaman dhokla with some sweet chutney or coriander chutney. I personally prefer sweet chutney you can serve it whatever you like.


There are numerous ways and variations of straightforward Recipe of khaman dhokla formula, fundamentally, the dhokla recipe is made with channa dal or besan which is later fermented for overnight. 

This fermentation requires a ton of arranging and planning ahead of time.
In this formula, I have utilized eno organic product salt which will rise the batter. I personally like the instant version. The instant version has the advantage that you can make.
Before starting my recipe I want to give you a few tips and tricks. First I want to say mix besan or gram flour mixture with other ingredients properly. There should not be any lump. 

Secondly, instead of Eno fruit salt, you can use baking powder. Add 2 tablespoon of hot oil in this batter it will make the batter more creamy running consistency.

Ingredients

2 cup gram flour+3 tablespoon semolina
1/2 tablespoon turmeric powder
1/2+1/2 teaspoon salt
1/2 +1/2 teaspoon sugar
5 gm Eno fruit salt
Oil as per requirement 
1 tablespoon  mustard seeds
1/2 teaspoon sesame seeds
1 tablespoon lemon juice
Chopped Coriander leaves+few curry leaves

Instructions

  • In a bowl add 2 cup besan or gram flour.  
  • Next, add 3 tablespoons of semolina or rave or suji in it.
  • Add 1/2 tablespoon turmeric powder,1/2 teaspoon salt, and 1/2 teaspoon sugar. Mix all of these ingredients very well with the help of a spoon.
  • Next, add 1/2 cup of water in it and beat the mixture nicely so that no lumps will be there.
  • At this stage add 1/2 tablespoon ginger paste in this batter and again mix it properly. If you think the batter is tight you can add some water in it. The batter must be running like consistency.
  • Next, add 2 tablespoons hot oil in this batter and mix it.
  • Add 5 gm Eno fruit salt in it and give a quick mix. If you want to use baking soda, you can use that also.
  • Pour some water in a pan and boil it.
  • Now pour the mixture in a greased pot and place it in the pan. (Use a stand to place it)
  • Cook it for almost 20 minutes. After 20 minutes insert a toothpick in it and check if it was cooked or not.
  • If cooked then remove it from pan and keep it aside for colling.
  • Next for tempering, add 1 tablespoon oil in a pan and heat it.
  • Add 1 tablespoon mustard seeds,1/2 teaspoon sesame,4 green chilis, few curry leaves,1 teaspoon sugar and pour water in it.
  • Let it be boil for few minutes after that add 1/2 teaspoon salt and 1 tablespoon lemon juice in this and mix well.
  • Now cut the dhokla in a square shape with the help of a knife.
  • Pour the mixture in it and soaked it for 10 minutes to absorb.
  • Lastly, garnish it with chopped coriander leaves and serve it with chutney.

How to make Soft & Spongy Dhokla Recipe with step by step process(With image):


1. First, take a big bowl and add 2 cups of besan or gram flour in it. Also, add 3 tablespoons of semolina or Rava.

2. Add 1/2 tablespoon turmeric powder,1/2 teaspoon salt, and 1/2 teaspoon sugar. Mix all of these ingredients very well with the help of a spoon.

3. Next, add 1/2 cup of water in it and whisk it in a clockwise direction for 5 minutes. Make sure there will be no lump. At this stage also add 1/2 tablespoon of ginger paste in this batter and again whisk it in clockwise for 5 minutes. 

If you think the batter is tight enough then add more water in it. The batter should be running like consistency. Add 2 tablespoons of hot oil and mix it.

4. Next, add 5 gm of Eno fruit salt in it and give a quick mix. Eno will make the dhokla for soft, spongy, and porous in texture.

 Instead of Eno you can add also baking powder, it will also give the same effect as Eno.  As soon as you add Eno you can see the batter will be nice foaming consistency.

5. Pour some water in a pan and boil it for few minutes. Now pour the mixture in a greased pot and spread all sides evenly. Place it in the pan with the help of a stand. 

Cook it for almost 20 minutes. After 20 minutes insert a toothpick in it and check if it was cooked or not. If cooked then remove it and place it aside for cooling purpose.

6. For tempering add 1 tablespoon oil in a pan and heat it. Add 1 tablespoon mustard seeds,1/2 teaspoon sesame,4 green chilis, few curry leaves,1 teaspoon sugar and pour water in it. 

Let it be boil for few minutes after that add 1/2 teaspoon salt and 1 tablespoon lemon juice in this and mix well. Now it is also made.

7. Now cut the dhokla in a square shape with the help of a knife. Pour the mixture in it and soaked it for 10 minutes to absorb. 

Lastly, garnish it with chopped coriander leaves and serve it with sweet or green chutney.

Some frequently asked questions:

What can I use instead of Eno in Dhokla?

If you don't have Eno fruit salt in your home or if you don't like Eno then use baking soda, but yes after adding soda does not allow the batter to be rest for a long time.

Why is my Dhokla not spongy?

After adding Eno does not allow the batter to be rest for a long time. Steam the batter in medium flame always otherwise it will be not cooked from inside.
